A fun challenge would be to build a working lock in Minecraft, to raise or lower the water for a boat to go between two water levels. I've tried this myself with limited success.
It can only be 2 blocks wide so you can use dispensers to add or remove water sources within the lock. You also have to add soul sand at the bottom in order for the boat to go up instead of sinking when you raise the water level.

I think it would be super cool to utilise the hole where the water drains in a cool way! Maybe make an underground city, with the funnel of water being a centrepiece? I know it would be a huge task, but I think it could be super rewarding to complete!

I just found my favorite minecraft youtuber, after 14 years..
This is probably not relevant to this build, but since the dam is built on a small stream, there should be also only a small stream leaving it, so the lake below it realistically makes little sense (if there was such a deep lake right between two hills before the dam, why not build the dam further downstream), so I think having a substantially bigger river coming into it and the top lake being longer would make more sense. I also think that the water below the dam should be shallower, because right now it seems like the two bodies of water are kind of similar in size. but then again, this is Minecraft, so who cares lol
I really like this style of video its not a harcore minecraft video where they make some sort of over the to build with bright lights and sounds and instead its just some nice guy building with soft music
