Lol, noob. The moving data between NUMA nodes penalty is HUGHE.
A single cpu system would be better, especially since adobe sw scale really badly with multiple core and numa nodes.
A 9950X or 7950x system would be better. I have both that and a threadripper 3960x, and the 7950x wins any day if u don't need a lot of IO/PCIE lanes.
I am only a few moments in on the video, the guy behind you must of thought you had a tesla, to beat the light. Pretty spooky to see the light change color after the accident.
I did one similar to the first idea you had with the watercooling build back in 2016, I regretted every single decision I made with dual E5-2690v2 that chucks power like it was nothing, and the thing is I used it as my NAS + Web host + VM test field, that was the worst build I made value wise, besides those abandoned watercooled PCs I made even earlier. At least it runs fine.
I have thoracic mid back nerve damage and struggle to use my arms from the severe pain but every 6 or 7 years I build a home computer..its that time again

I would use server as base. Something like Dell R720 or R730 or equivalent tower model. (I may go with EPYC 7D12 and H11.)
GPU, I would choose P40 or P100. They have tons of memory with Pastcal core. And much cheaper due to lack of video output. If not install in a server then you need to 3D print a fan shrout for it.
NVMe, I like PM983 and PM9A3.
heh its ok 125 watts per CPU. I do like Skylake back then. Now I am just focus on better performance at lowest wattage. I wish both CPU manufacturers focus on high performance at lowest wattage possible like Apple is doing with M series.
You could have kept your existing computer and upgraded to a Ryzen 5700X brand new for $160. According to passmark, it has much better single-thread rating with much less multi-thread rating. It is a trade off, but one option costs you a ton more money.
Great performance! But I built a quad XEon system in an old proliant server and had to turn it off becuase It cost tooo much in electricity bill…. I mean 300 Euro/$/CHF per Months is too much for a server for electricity alone. I now have a Ryzen 9 7900 system with 65W TDP and it works fine.
All this extra power etc that we have to do to scrub through footage. Remember VirtualDub? "hold down shift and you scrub ONLY to 'I' frames" massive performance features that i don't see anywhere.
